Introduction
Australia is an extremely socially accepting country, with over 200 different cultures of people living in Australia today it is evident that Australia is a very multicultural place. Before Great Britton invaded this country in the late 17 hundreds, over 500 Aboriginal tribes enriched Australia with many different types of food, culture and traditions.
Aboriginal cuisine
Aboriginal tribes experienced very unusual lifestyles. They would hunt and gather their food depending on the climate and geography of the area they lived in. People living on the coast ate different foods to those living in the desert. Fish, shellfish and turtles were the basis of the diet in coastal regions and on rivers. Because the desert is a very hot and dry area, plant and animal life was sparse. Inland tribes hunted kangaroos and other wildlife. The preparation of food consisted of grinding, cooking in the fire and in ashes, roasting on the coals, steaming and boiling. European settlement disrupted the food supply. Forced from their lands, the Aboriginal people had no choice but to accept foreign foods and eating habits. As a result, their nutrition suffered, they became less active and their new lifestyle led to poor health.

There were many key events that occurred in history that were essential in order for Australia to become the multicultural country that it is today. During 1793 the first group of free settlers settled at Liberty Plains in NSW. European settlers had a major influence on the diets of modern Australians. They would normally smuggle their own foods to Australia, such as flour and beef. Flour was a staple ingredient of the diets at the time, for instance it was used to make damper and bread. Meats that were consumed by the invading settlers were beef, pork or mutton. In addition, from the mid to the late 18 hundreds German migrants established vineyards in South Australia, Italians, Maltese and Scandinavians came to work on sugar plantations and wheat farms and Chinese started market gardens Hence, food supply multiplied and the variety of foods available increased with the amount of migration that was occurring at the time. Furthermore, many other events during the mid 19 hundreds had occurred such as the rapid expansion of technology when technology advanced rapidly in the areas of transport, food preservation, packaging and communication, the great depression which was a time in history when nutrition in food was at an all time low and was also the time when vegemite and Anzac biscuits came onto the market place and also how the non-indigenous population in Australia reached over 7 million at the time which was quite significant. lastly, during the 1970's migration from Asian countries such as Vietnam and Cambodia increased and had a significant effect on the foods and cuisines in Australia. Globalisation has made us even more aware of the customs and food patterns of other countries, and we are seeing the result of this in our food stores and markets to a greater extent. We now have a range of dishes that are commonplace in Australia that were once introduced to us by migrants. Because of all these events, Australia has become one of the worlds most multicultural countries to live in.
